I realize summer is pretty much over for most by now but summer is still in full swing here in El Paso – and it will be well into October! Truth is, I’ve been wanting to share this recipe for a long, long time and I honestly believe that cookouts and summer recipes are the best thing about summer (except for maybe the beach).
When it’s time for a good ol’ cookout, Lance is always in charge of the grill and I’m in charge of the sides. One of my go-tos is this delicious pasta salad! Whenever I hit up Walmart to get all the ingredients, I always make sure to grab Barilla’s Tri-Color Rotini in the blue box. I love how and quick and easy Barilla makes dinner, bringing Al Dente perfection to every pasta meal. Not to mention that fun shape + colors make this a favorite of Joey’s.
For our cookouts, I love to purchase the convenient Gold Peak Iced Tea 6 packs, I like their ease of use and that they come in several, refreshing, flavors – and it pairs perfectly with the pasta salad. Top off the whole thing with some fruit popsicles and you’ve got yourself a party!
First, cook the pasta according to the directions on the box, then cool. This is one of the best parts about making this pasta salad – you can cook the pasta the night before or in the morning, then let it chill in the refrigerator over night or during the day. This means you can spend time with family and friends instead of in the kitchen.
Once you’re ready to eat, all you have to do is chopped up the pepperoni, put all the ingredients in a bowl, mix, and enjoy! Bonus points if you use the mini pepperoni sometimes available, then it becomes even easier and faster to serve.
Another great aspect of this recipe is how versatile and flexible it is – don’t like olives? Leave them out! Want tomatoes? Add some! You can 100% personalize it 🙂
Rainbow Pasta Salad
- 1lb. Barilla TriColor Rotini pasta
- Pepperoni, cut in fours
- Olives, sliced
- 1 cup shredded Parmesan cheese
- 1-2 cups Zesty Italian Dressing
- Cook the pasta according to the instructions on the book. Drain. Do NOT rinse.
- Add 1/4 cup of dressing to the pasta and mix.
- Store pasta in the refrigerator until ready to serve.
- Add pasta, remaining dressing, pepperoni, parmesan cheese, and olives to a large bowl. Mix.
- Serve chilled or at room temperature.
- Pour yourself some Gold Peak Tea and enjoy!
