Apparently this week I’m all about food but GUYS. I have not been this excited about sharing a recipe in… ever. Nope, I have NEVER been so excited about a recipe. These Crispy Chicken BLT sandwiches were so easy, so delicious! My mouth is watering just thinking about them. So let me set the stage. Last week Lance was gone for training making it was just my mom and I for dinner so I decided to wing it and not meal plan. I was grocery shopping at Walmart, stocking up on my cheese because hello… cheese, when I see them, Kraft’s Fresh Take dinner helpers – cheese and bread crumbs?! Is this real life? It is. I grabbed three kinds, Cheddar Jack & Bacon, Southwest Three Cheese, and Italian Parmesan with absolutely no idea what I’d make. Then I hopped over and grabbed some chicken breasts day dreaming of cheesy bready goodness! And I had a $1 off coupon? BONUS.
It’s been so incredibly hot in El Paso lately – not according to locals but it’s supposed to be 90’s today, full summer weather in my book! – so I opted to make something fresh and spring, not too heavy. For some odd reason I’ve been craving a BLT like you wouldn’t believe, but I’ve always felt like BLTs were missing something – some body, if you will – so I decided to add some crispy chicken using Kraft’s #FreshTake in the Cheddar Jack and Bacon flavor. My mom was pretty dubious about this Crispy Chicken BLT sandwich concoction but she went along with it. And boy, was she glad!
We grabbed the chicken breasts and cut it into fillets… and by we I mean my mom because I swear I almost had a panic attack when she said “Just fillet it!” like it was something I did everyday – thank heavens for mothers! Then all I had to do was open up the package, mix the cheese and seasoned breadcrumbs, coat the chicken and put it in the oven for 25 minutes. While the chicken was baking, I cooked up some bacon, sliced the tomato and washed the lettuce. My mom thought adding some french fries would be a good idea so she took care of that. Oh my god…
The right amount of bacon, balanced out by the tomato and lettuce all held together by some delicious Sourdough bread… oh, so good you guys! It even comes Pudge and Panda bear approved – which is the highest of compliments – since a small piece of the crispy chicken may or may not have fallen on the floor, they begged for a piece of our Crispy Chicken BLT all dinner!
Crispy Chicken BLT Sandwich – A Fresh Take on a classic
- 1 large chicken breast, in fillets
- 1 pkg Fresh Take Cheddar Jack & Bacon
- 1 tomato, sliced
- 1/2 lb bacon
- 1 Green Leaf Lettuce
- 1. Preheat oven to 375 degrees.
- 2. If you haven’t done so, fillet your chicken breast. Then coat with Kraft’s Fresh Take Cheddar Jack & Bacon according to package’s directions.
- 3. Place chicken in oven for 25-30 minutes, until cooked thoroughly.
- 4. While chicken is in the oven, prepare bacon, slice tomato, and wash and prepare lettuce.
- 5. When chicken is done cooking, assemble Crispy Chicken BLT sandwich and pair with preferred side.
I can’t wait to make these again! They’d be perfect for Easter or any other holiday since they’re so easy to make and prep time is so short! I also can’t wait to try the other flavors and some of the #FreshTake recipes!
